Recipe

Ingredients: (serves 2)

  • 170g soft tofu

  • 10g oyster mushroom

  • 20g mangetout

  • 200g broccoli

  • 10g carrot

  • 10g spring onion

  • 2 tsp self-raising flour

  • ½ tsp potato starch

  • ½ egg

  • ½ tsp salt

  • ½ tsp sesame oil

  • 500ml oil

     

 

Sauce:

  • 2 tsps oyster sauce

  • 1 tsp light soy sauce

  • ½ tsp sugar

  • 100g water

  • ½ tsp potato starch

Method:

  • Chop the oyster mushroom, mangetout, carrot, and spring onion into small pieces.  Smash the tofu and then mix in the salt, egg, sesame oil, potato starch and self-raising flour.  Mix well with the vegetables.

  • In a wok or saucepan, heat the oil to 180℃, and gently put spoonfuls of the mixture into the hot oil.  Deep-fry for 3 minutes until the tofu turns golden brown. Remove with a strainer, and drain.

  • Cut the broccoli into pieces and boil in hot water for 1 minute.

  • Prepare the sauce by heating all the sauce ingredients together for about 1 minute.

  • Put the tofu in the middle of a serving plate, use the broccoli for decoration around the edges, then pour the sauce over the tofu, and serve hot.

原料:(兩人份)

  • 嫩豆腐 170 克

  • 平菇 10 克

  • 甜豆 20 克

  • 西蘭花 200 克

  • 紅蘿蔔 10 克

  • 蔥 10 克

  • 自發粉 2 茶匙

  • 生粉 ½ 茶匙

  • 雞蛋 ½ 隻

  • 鹽 ½ 茶匙

  • 麻油 ½ 茶匙

  • 油  500 毫升

     

 

醬汁:

  • 蠔油 2 茶匙

  • 生抽 1 茶匙

  • 糖 ½ 茶匙

  • 水 100 克

  • 生粉 ½ 茶匙

做法:

  • 平菇、甜豆、紅蘿蔔、蔥切碎。豆腐壓碎,加鹽、雞蛋、麻油、生粉和自發粉,與切碎的蔬菜攪拌均勻。

  • 油加熱至 180℃,用湯匙把拌勻的材料輕輕放進去,炸 3 分鐘至金黃色後,撈到濾篩瀝幹。

  • 西蘭花切成小塊,用開水灼 1 分鐘。

  • 將做醬汁的材料加熱約 1 分鐘。

  • 西蘭花排在碟的邊緣,炸好的豆腐放在中央,將醬汁澆在豆腐上。
