Recipe

Ingredients:

  • 40g golden needle mushroom (enokitake)

  • 50g oyster mushrooms

  • 360g egg tofu

  • 100g broccoli

  • 1 tsp salt

  •  

 

  • ½ tsp sugar

  • 2 tsps oyster sauce

  • 1 tsp light soy sauce

  • 2-3 tsps potato starch

  • 1 tsp oil

  • ½ tsp sesame oil

Method:

  • Wash and slice the broccoli, and put into boiling water for 1 minute. Remove onto a serving plate.

  • Cut the egg tofu into pieces and sprinkle all over with potato starch. Put oil in the wok and fry the egg tofu until golden brown in colour.

  • Wash the oyster mushrooms and golden needle mushrooms and cut them into pieces or short sections.

  • Add the mushrooms to the wok, add salt, sugar, oyster sauce, light soy sauce, sesame oil and simmer for 1 min.

  • Remove the egg tofu and mushrooms from the wok and arrange over the broccoli.

原料:

  • 金針菇 40 克

  • 平菇 40 克

  • 玉子豆腐 360 克

  • 西蘭花 100 克

  • 鹽 1 茶匙

  • 糖 ½ 茶匙

 

 

  • 蠔油 2 茶匙

  • 生抽 1 茶匙

  • 生粉 2-3 茶匙

  • 油 1 茶匙

  • 麻油 ½ 茶匙

做法:

  • 西蘭花洗乾淨、切成小塊,在開水中灼 1 分鐘後放在碟上。

  • 玉子豆腐切成塊,表面均勻灑上生粉,入油鑊煎至金黃色。

  • 平菇與金針菇洗淨後分別切成小塊和小段。

  • 雜菌與鹽、糖、蠔油、生抽、麻油入鑊,煨 1 分鐘。

  • 將玉子豆腐與雜菌鋪在西蘭花上。
