Recipe

Ingredients: (serves 1)

  • 200g hor fun noodles

  • 20g spring onion

  • ¼ tsp sesame oil

  • 150g chicken thigh meat

  • 1 tsp potato starch

 

 

  • ¼ tsp sugar

  • ¾ tsp salt

  • 1 egg

  • 3 tsps oil

Method:

  • Chop the spring onion and reserve.

  • Slice the chicken . Season with ¼ tsp salt, ½ tsp oil and ½ tsp potato starch.

  • Put 1 tsp oil in the wok and add the hor fun. Stir-fry it for 3 mins until it becomes soft.  Then put the hor fun on a serving plate.  Put the seasoned chicken into boiling water for 1 minute,  and then drain away the water.

  • Put 1 tsp oil into the wok,  then add the chicken.

  • Add 200ml water, ½ tsp salt, ¼ tsp sugar, ¼ tsp sesame oil, and ½ tsp potato starch mixed with 2 tsp water.

  • Boil the chicken and sauce together, and then pour the egg (stirring well) over the top slowly and wait for 10 seconds. Then mix well and pour ½ tsp oil over the top.  Put the chicken and egg sauce onto the hor fun, and decorate with the chopped spring onion.

 

Story:

Over one hundred years ago in the Qing Dynasty, Fan Ah Xiang and her husband ran a small snack shop in a village called Shahe, today in northern Canton (Guangzhou).

One morning, a ragged old man collapsed in front of their shop.  The couple rushed to the starving man's help and offered him food. From then on, the man would come to their shop nearly every day and the kind-hearted couple would generously serve him.

One day, Fan Ah Xiang fell seriously ill and didn't want to eat.  The old guy saw this and swiftly prepared a dish of special steamed rice. Fan ate the dish and soon regained strength.  The couple was grateful for his help but also grew more curious about his past.  The old man then revealed he used to be an imperial cook at the Forbidden City in Beijing.  After years of loyal service, he was fired due to some words spoken that offended the Empress Dowager Cixi.

"This dish was made in Shahe, so we should call it 'Shahe Fen' (沙河粉 Shahe Rice Noodles)," the old man said.  Soon after, the old man left Shahe and was never seen again, but the snack he left became ever more popular every day.

原料:(一人份)

  • 河粉 200 克

  • 蔥 20 克

  • 麻油 ¼ 茶匙

  • 雞腿肉 150 克

  • 生粉 1 茶匙

 

 

  • 糖 ¼ 茶匙

  • 鹽 ¾ 茶匙

  • 雞蛋 1 隻

  • 油 3 茶匙

做法:

  • 雞肉切片,蔥切粒,用 ¼ 茶匙鹽、½ 茶匙油和 ½ 茶匙生粉腌好。

  • 在鑊裏放 1 茶匙油,放入河粉炒 3 分鐘至變軟,盛到碟上。

  • 雞肉用開水灼 1 分鐘後瀝幹水分。在鑊裏放 1 茶匙油後加入雞肉。

  • 加 200 克水、½ 茶匙鹽、¼ 茶匙糖、¼ 茶匙麻油以及用 2 茶匙水和 ½ 茶匙生粉調好的芡漿。醬汁煮開後,將攪拌好的蛋漿慢慢倒上去。等 10 秒鐘後,攪拌均勻,再加 ½ 茶匙油。

  • 將煮好的雞蛋汁澆到河粉上面,灑上蔥花。

 

故事:

早在清朝末年,位於廣州北郊的沙河鎮上有家 “義和居” 小食店,店主樊阿香夫妻倆,早上賣白粥油條,中午賣家常飯菜,生活倒也安穩。一天早上,店門口來了一位衣衫襤樓的老人,有氣無力地倒在門前的青石上。阿香不禁起了惻隱之心,便叫妻子送一碗熱粥給老人吃。老人推說沒錢不能白吃,阿香便道:“本店雖小,但對老人家,這白粥一向是免費的,你就放心吃吧!” 沒想到,從此之後老人幾乎每天都來店裡吃白粥,阿香夫婦一直都沒有嫌棄,照樣給他吃。

不久之後的一天.阿香得病後茶飯不思,臥床不起,小店只能關門歇業。這一天中午,老人又出現在店裡。當他知道阿香的病情後,便說:“阿香哥粒米難進,病自然難愈,今天就讓我做碗好吃的給他開胃吧!” 老人就用從白雲山上引來的泉水浸泡大米,然後熟練地磨好米漿、燒好開水,再把米漿舀進竹匾上薄薄地攤了一層再蒸。一會兒工夫,米漿變成了粉皮。老人揭皮切條,加上蔥、鹽、香油,送到阿香床前。阿香頓時食慾大開,幾碗下肚後,病情果然好轉。他再三向老人道謝,也終於知道了老人的來歷。

原來,老人竟然是宮裡的御廚,只因性格耿直得罪了慈禧太后,僥倖中逃出北京,從此隱姓埋名,四處躲避追緝。老人說:“此粉出在沙河,就叫沙河粉吧!我在這裡已經停留多時,再不走恐怕就要連累主人家了!” 說完就走了,以後鎮上的人再也沒見過他,而義和居的沙河粉也就因此而得名。
