Method:

Mix together the prawns, minced pork, salt, pepper, ground ginger, sherry, spring onions, egg white and cornflour. Divide the mixture into 6 and spread onto the bread.

Spread the sesame seeds onto a plate and put the prawn toasts face down into the seeds. Press gently so each slice is completely covered.

Heat the oil in a wok or frying pan until a cube of bread turns golden brown. Place the toasts in the oil spread side down and fry for about 2 ½ mins before turning over and cooking for another 2 mins.

Drain on kitchen paper. Cut off the crusts and cut each slice into triangles. Serve hot.
