Ingredients: (serves 4-6)

  • 200g green prawns, peeled and chopped finely

  • 50g pork fat, minced

  • 1 tsp salt

  • Pinch of pepper

  • ½ tsp ground ginger

  • 1 tbsp dry sherry

 

 

  • 2 spring onions, finely chopped

  • 1 egg white

  • 2 tsps cornflour

  • 6 thin slices white bread

  • 100g sesame seeds

  • 600ml vegetable oil

Method:

  • Mix together the prawns, minced pork, salt, pepper, ground ginger, sherry, spring onions, egg white and cornflour. Divide the mixture into 6 and spread onto the bread.

  • Spread the sesame seeds onto a plate and put the prawn toasts face down into the seeds. Press gently so each slice is completely covered.

  • Heat the oil in a wok or frying pan until a cube of bread turns golden brown. Place the toasts in the oil spread side down and fry for about 2 ½ mins before turning over and cooking for another 2 mins.

  • Drain on kitchen paper. Cut off the crusts and cut each slice into triangles. Serve hot.

  • 肥豬肉 50 克(剁碎)

  • 鹽 1 茶匙

  • 胡椒粉 1 撮

  • 薑末 ½ 茶匙

  • 白芝麻 100 克

做法:

  • 將蝦肉、剁碎的肥豬肉、鹽、胡椒粉、薑末、雪利酒、蔥、蛋清和生粉攪拌均勻後,分成 6 份搽到麵包片上。

  • 把芝麻鋪在碟子上,將麵包片抹了蝦肉的一面朝下放上去,輕輕按壓,使芝麻完全覆蓋在蝦肉之上。

  • 用鑊或煎鍋熱油,放一粒麵包粒試油溫。當麵包粒變成金黃色時,即表示溫度已足夠。將麵包片抹了蝦肉和芝麻的一面朝下,煎大約 2 ½ 分鐘,再翻面煎 2 分鐘。

  • 煎好的多士放在廚房紙上瀝幹油份。切去四周硬邊,再將每一片多士切成三角形小塊。趁熱享用。
