Recipe

Ingredients: (serves 4)

  • 180g plain flour

  • 1 egg (30g)

  • 200g red bean paste

  • ¼ tsp salt

  • 280g cold water

  • 30g oil

Method:

  • Put the plain flour and salt into a mixing bowl.  Add the egg and mix well.

  • Add 140g cold water to the bowl,  and mix well again to make the batter.

  • Over a low heat put ¼ tsp oil in a non-stick frying pan, and spread the oil evenly over the base of the frying pan.

  • Put 80g batter into the frying pan, tilting until the batter evenly covers the base. Cook for 2 minutes and then flip the crepe over,  and cook for a further 2 minutes on the other side.

  • Put the crepe on a plate and put 50g red bean paste in the middle of the crepe with more batter, and fold it into a rectangle.

  • Add 30g oil in the pan and put the crepe back. Fry the crepe on both sides for 2 minutes until it becomes golden brown.

  • Cut the crepe into 4 and serve hot.

原料: (四人份)

  • 中筋麵粉 180 克

  • 雞蛋 1 隻(30 克)

  • 紅豆沙 200 克

  • 鹽 ¼ 茶匙

  • 冷水 280 克

  • 油 30 克

做法:

  • 將打勻的雞蛋與麵粉、140 克冷水攪拌均勻。

  • 加入剩下的 140 克冷水攪拌均勻。

  • 使用平底不粘鑊,保持小火。放入 ¼ 茶匙的油,用廚房紙將油掃勻。

  • 在鑊中倒入 80 克麵糊後,傾斜平底鑊,使麵糊均勻佈滿鑊底。煎兩分鐘後,翻面再煎兩分鐘。

  • 把煎好的薄餅放在碟子上,在中央放 50 克紅豆沙與少許麵糊後,包成長方形。

  • 在鑊中放入 30 克油,返煎包好的薄餅。每面各煎兩分鐘至金黃色。

  • 切成四份,趁熱食用。
